6 quick & delicious recipes to enjoy using breakin'bread this season

Don’t know about you but we’re certainly loving a good nibble this time of year. And with lots more hosting coming up as Christmas and New Years approaches, we want all things simple, quick and oh so moreish. That's why we want to share our 6 favourite ways to use breakin’bread at the moment.


Whether you're making a quick snack or treat for yourself, need a canapé or nibble for your next dinner party - you've come to the right place!


ONE. breakin'bread canapé ~ a delicious blini option

Blinis are great and all but don't you miss a bit of crunch? With pumpkin seed breakin'bread as the base you've got a quick and fool-proof starter that will impress. Whip up these easy, protein-packed & delicious snacks in seconds. It's the quickest and most flavourful 12g of protein around. Once you try these, you'll be making breakin'bread-inis instead of blinis moving forward.


Ingredients (serves 6 - 8)

1 pot of crème fraîche

100g red fish roe (we use this one from Scandi Kitchen)

dill to garnish


Method:

  1. break slices of pumpkin seed breakin’bread into bite sized pieces and spread out on a large serving platter

  2. dollop crème fraîche and 1/2-1 tsp of fish roe onto breakin'bread

  3. add some dill and sprinkle with sea salt flakes & fresh ground pepper


Tip: gravlax or smoked salmon would work beautifully instead of fish roe here if you prefer




TWO. breakin'bread canapé ~ roasted tomatoes, red onion and mozzarella

This is such a simple and delicious take on a bruschetta. The roasted cherry tomatoes, caramelised red onion and gentle hint of rosemary, from the rosemary, olive oil & sea salt breakin'bread, add a more autumnal feel. You can of course use fresh tomatoes instead, but to us that feels more summery (but you do you - sometimes we just need to be transported to Italy, no matter what time of the year).


This recipe is so easy, as you can prep the roasted tomatoes and onion ahead of time and let them cool. Then it only takes a few min to assemble and doing this right before serving is essential to ensure super-crunchy breakin’bread. No soggy bread in sight!

Ingredients (serves 6 - 8)

2 packs mozzarella

ca 340g tomatoes

1 red onion

basil

optional: balsamic vinegar glaze


Method:

  1. preheat oven to 170C

  2. finely chop red onion and spread this out in an oven-proof dish and add cherry tomatoes (on vine if available at your local shop)

  3. drizzle generously with olive oil and sprinkle with salt.

  4. roast for ca 15 min, until onions are silky and browned and tomatoes are soft but retain their shape. Set aside to cool

  5. when ready to plate, break slices of rosemary breakin’bread into bite sized pieces and spread out on a large serving platter

  6. scoop some caramelised onion onto breakin’bread pieces, top with sliced or pulled bits of mozzarella and top off with a tomato

  7. sprinkle chopped basil over the entire platter and add salt and pepper to taste

    optional: drizzle a bit of balsamic vinegar glaze in a serpentine pattern across the platter


THREE. recipe for a great cheeseboard

It should come as no surprise that making a cheeseboard is one is one of our favourite ways of using breakin’bread - it’s a massive raison d’etre for starting the brand in the first place. A cheeseboard is just so great and versatile.


It’s a fantastic nibble for a simple aperitivo with friends, a lovely starter where guests can pick and mix as they like, and the only option for a savoury dessert (although adding some dried fruits, berries and chocolate to the cheeseboard for sweetness, is always a yes from us). FOUR. breakin'bread canapé ~ goat cheese & fig with honey and pine nuts

Goat cheese, figs, honey and a nutty crunch from both the pumpkin seed breakin’bread and the pine nuts - beautiful! No cooking required here (apart from lightly toasting some pine nuts) and you can assemble these in about a minute when you're ready to serve. Adding the finishing touches like drizzling the honey and sprinkling pine nuts in front of your guests is a sure-fire conversation starter.


Ingredients (serves 6 - 8)

300g goat cheese

8 figs

honey (a soft & runny variety)

toasted pine nuts


Method:

  1. toast pine nuts in a pan with a bit of salt until golden brown, then set aside to cool

  2. break slices of pumpkin seed breakin’bread into bite sized pieces and spread out on a large serving platter

  3. thinly slice goat cheese and place on top of breakin’bread

  4. cut figs in halves and each half in thirds and add on top of the goat cheese

  5. drizzle honey all over the platter and canapés, then garnish with the toasted pine nuts


FIVE. chocolate-dipped breakin'bread

A perfect blend of sweet and salty. It's a really divine treat that you have to try! Think crunchy and light pumpkin, sunflower & chia seed breakin’bread, slow-roasted and perfectly toasted then dipped in melted, dark chocolate…


Add chocolate-dipped pumpkin seed breakin'bread to your next cheeseboard or enjoy them as a really delicious, and actually very nutritious, treat right away.


Ingredients (serves

100g dark chocolate

sea salt flakes


Method:

  1. melt chocolate in bowl over a pot of simmering water

  2. dip half of each slice of breakin’bread in chocolate

  3. transfer to a plate covered in parchment paper and immediatly sprinkle with sea salt flakes

  4. let chocolate set for around 30 min


Tip: if you’re impatient, pop them in the freezer for 5-10 min



SIX. breakin'bread as a snack on its own

Sometimes we just need a quick snack with zero fuzz and that’s when we reach for a bag of breakin’bread and simply nibble on that alone. Regardless of whether it's the rosemary breakin'bread or pumpkin seed breakin'bread that is your favourite, each piece is all-natural, gluten-free and packed full of nutritious buckwheat, sunflower seeds, chia seeds and psyllium husk. This makes for a high-protein and fibre-dense snack that’s far from dry or boring.


Fill a glass or bowl with slices of breakin'bread for a healthy version of crisps or by all means dip it into some hummus if you’ve got some around!
